This recipe is super easy AND tasty that even your teenagers can help with!

What you’ll need:

1 pound of boneless skinless chicken breast (cut into pieces)

1 cup of chopped carrots

1/2 bag of steam fresh broccoli

2 stalks of fresh zucchini

1 small onion

1.5 cup of teriyaki sauce

2 cups of brown rice (cooked)

The first thing you’ll want to do is to marinate your cut chicken pieces in the teriyaki sauce overnight. The next day, pour your teriyaki chicken mix into a fry pan and cook thoroughly. No need to add any salt, the teriyaki sauce will serve for your seasoning.  Remove your chicken from the pan. Toss your veggies (carrots, onion and zucchini) into the pan and cook until soft. While your veggies are cooking, put your steam fresh broccoli into the microwave for 5-7 minutes. Once that is done, you can add ½ of the bag to your veggie mix. You can use the other half of the bag for another meal! Once your veggies are to your liking, you can add your chicken back to the pan. Mix together and simmer on low. Fix your brown rice according to the package.

Plate your brown rice and pour some of your teriyaki chicken and veggies on top. ENJOY!

Notes: you can also use any other veggies that you like to the stir fry! You can sub your chicken for shrimp as well! Make it your own. Cheers to healthy and fresh eating!
